B.F.S.? What is B.F.S?
Well, let me tell you. I’m starting a short weekly series about what I bake for my husband’s soldiers. So, B.F.S. stands for Baking For the Soldiers. I would have put the whole thing in the title, but it was just a bit long.
Each Friday, minus a few, over the last year I have sent cookies in with my husband for his office to enjoy. Most cookies are repeats but others I’ve sent in and cringed knowing that they should never be eaten. Those recipes do not make it into my pink recipe binder of awesomeness.
Today I am sharing the BEST chocolate chip recipe I’ve ever used. You may be thinking, “Whatever, chocolate chip cookies are all the same.” But, NO, you would be wrong to think that!
I grew up always using the recipe on the back of the Tollhouse bag. They taste fine, but I have never made them without the cookies turning into flat pancakes that run into each other. My Uncle Richard would make fun my cookies and then have the gall to ask me to make him some! I would do it, but only because my mom said I had to.
Anyways, I came across this recipe from the Food Network Canada and changed it a little. I have never gone back to the Tollhouse recipe or any other I tried along the way.
Here it is. Give it a whirl!

- 1 1/2 cups butter softened
- 1 1/2 cups brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 4 tsp vanilla extract
- 4 cups flour
- 4 tsp cornstarch
- 2 tsp baking soda
- 1 tsp salt
- 2 cups chocolate chips
Ingredients

- Preheat oven to 350 degrees Fahrenheit.
- Cream together the butter and sugars.
- Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chips.
- Using a tablespoon drop dough onto a parchment paper lined cookie sheet. Bake for 10-12 minutes until golden and set around the edges.
- Let cool on sheet for 5 minutes, then move to wire rack to cool completely. Makes approximately 6 dozen cookies.
This is a doubled up recipe, because they are too good to make a single batch. If you want to make fewer cookies just half the recipe.
You might have noticed that I am using two pans here. I’ll explain. When we first moved to Korea I was burning everything, and I mean everything! I had used a gas oven in the past, so I don’t know what was different about this one. I tried doubling up my pans and it worked like a charm. I also have an airbake pan, but finding the right sized pan is hard with our tiny Korean oven. It’s easier to find regular pans and stack them.
This isn’t even half of them, some are still cooling. I scooped another three dozen dough balls onto a sheet and placed it in the freezer. Once frozen I’ll put them in a ziploc and save them for when I’m in need of baking something quickly.
I’ve been thinking. I have a pretty good assortment of cookies that I make for the soldiers, but I like to add new ones into the mix now and then. I try ones I find on pinterest, but I have no way of knowing if they are as good as “they” say they are until I make them. And like I said before, I cringe sending some of them in because they are not as good as “they” make them sound.

I will take the first five entries and make them all and send them in for the soldiers to vote on. The winner will recieve something from Korea! Not sure what yet, but it will be something awesome. If you live here, maybe I’ll take you out to lunch or something. I don’t know. I’ll get it worked out.
