We are onto week 2 of the Baking For the Soldiers (B.F.S.) cookie series. As I promised last week I am sharing with you an Orange Creamsicle recipe.
I need to be completely honest with you. The first time I made these I was not impressed. I thought it was one of the recipes that I would never make again. Turns out that the soldiers had a completely different opinion. They loved them! So this recipe made its way into the pink binder of awesomeness.

- 2 1/2 cups all purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter softened
- 1/2 cup sugar
- 1/2 cup brown sugar firmly packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon orange extract
- 2 tablespoons orange zest approx. 2 oranges
- 2 cups white chocolate chips

- Preheat oven to 375 degrees Fahrenheit.
- In a small bowl combine flour, baking soda, and salt. Set aside.
- In a large bowl, bream butter and sugars until light and creamy. Beat in egg, vanilla and orange extract until smooth. Gradually add flour mixture until combined. Stir in orange zest and white chocolate chips.
- Drop rounded teaspoonfuls onto parchment lined cookie sheets. Bake 10-12 minutes or unitl golden brown around edges. Cool for several minutes on cookie sheets before transferring to rack to cool completely. Store in airtight container.

I’m pretty sure you don’t need a step-by-step picture guide as to how to mix cookie ingredients, so I’ll skip that.
What I do want to show you is what makes the zesting an orange step so easy. It’s this microplane tool. I’ve used it for zesting oranges and lemons and for grating hard cheeses and chocolates. It’s a very handy tool.
The first one is the one I use.

Did you know it started off as a wood working tool? From wood rasper to fruit zester, makes sense to me.
Oh, one suggestion. Please wash your oranges and make sure they are very dry before you zest them. If you don’t the zest turn into a bit of a paste. It’s still good to use, just sticky.
Here it is all mixed up and ready to bake.
In our house Brother is notorious for sneaking cookie dough by the spoonfuls. I kept guard better today. He asked if I would at least let him have a beater, to which I agreed. I even turned off the mixer before giving it to him.
He took one and gave one to Sister. I’m not completely sure what happened next, but for some reason he took a header into his sister’s dough covered beater. After an, “Oh yuck!” and a bunch of laughing they agreed to trade.
